Garlic Butter Toast with Honey
Hereβs all you need:
ππ»2 pieces of white bread
ππ»1 tbsp toast butter ( I am using Snow Brand Neo Butter - This is our all time favourite butter at home and ou can get them in NTUC)
ππ»1 garlic (grated)
ππ»Dash of white paper
ππ»Sprinkle of salt
ππ»Drizzle of honey
ππ»Grated Mozzarella (optional)
ππ»Mixed Herbs (optional)
Methods:
β Scoop 1 tbsp of butter and grate 1 piece of garlic into a bowl
β Sprinkle some white peper, a pinch of salt and mixed herbs (optional). Mix well
β Spread the seasoned butter on both slices of white bread evenly
β Sprinkle some grated mozzarella on top (if youβd like) of one bread and cover it with another slice of bread
β Cut the bread into 9 portions
Pop it into an air fryer at 180 degrees for 8-10 mins (same method for oven)
β Once done, remove and drizzle some honey on top
β Ready to serve!
Chicken and Vege Energy Tots
Ingredients:
ππ» 1 Medium sized potato, peeled and diced ( I am using Natureβs Best Brastagi Potatoes that can be purchased from NTUC)
ππ» A handful of pumpkin, diced
ππ» A handful of broccoli florets
ππ» 2 tbsp minced chicken
ππ» 3 tbsp quick oat
ππ» 1 egg, beaten
ππ» Unsalted Butter for brushing tin
ππ» Baby food seasoning powder (optional)
ππ» 1/2 medium sized carrot , peeled and diced ( optional)
Methods:
β
Preheat oven at 180Β° for 5-10 mins
β
Steam potato, broccoli, pumpkin, carrots and minced chicken for 20 mins
β
Once done, use a fork to mash them until no lump seen
β
Sprinkle some Baby Food seasoning if youβd like
β
Add 3 tbsp of Quick Oat and mix well
β
Roll them Info Balls and dip into the egg
β
Brush the muffin tin with unsalted butter and bake the balls for 15 mins
β
Serve!
π‘You may replace potato with sweet potato fit extra sweetness
Sugar Free Banana Cake with Dark Choco and Cinnamon
Ingredients:
ππ» 2 overripe bananas ( the more ripe the better)
ππ» 2 large eggs, beaten
ππ» 1 tbsp of unsalted melted butter
ππ» 1 1/2 cup all purpose flour
ππ» 1/2 Tsp baking powder
ππ» 1 Tbsp vanilla extract
ππ» 1 tbsp cocoa powder
ππ» sprinkle of cinnamon
ππ» chocolate chips of dark chocolates

Methods:
β
Preheat oven at 175Β° for 15 mins
β
Use a fork to mash the bananas until smooth ( no lump seen)
β
Add mashed banana, melted butter, cocoa powder, vanilla extract, sprinkle of cinnamon , eggs and blend well.
β
Sift flour and baking powder. Blend the mixture well.
β
Let it Rest for 5-10 mins
β
add chocolate chips or dark chocolates and mix well
β
Brush a baking tin with butter and place a baking paper on the base
β
Pour the batter and give it a gentle tap to let the air bubble escape from the batter
β
Bake for 20-25 mins or until itβs is thoroughly cooked
π‘ To check if itβs cooked, insert a toothpick into the cake. If it comes out clean, itβs cooked. Otherwise, pop it back for a few more minutes before checking again.
π‘ Ensure the batter is smooth and do not over mix. As long as all ingredients are combined well, it should be good to go.
Banana Blueberry Birthday Cake with Yogurt Frosting (No Sugar Added)
Ingredients:
- 16 tbsp quick oat - pulse it into oat flour
- 2 overripe bananas - mashed
- 3 eggs
- 1 1/2 tbsp cocoa powder
- 1/2 cup fresh milk
- 1 1/2 tsp baking powder
- 3 tbsp coconut oil or 2 tbsp melted butter
- 1 cup blueberries
- 1 tbsp chia seed (optional)
Methods:
To prepare the cake
- Preheat oven at 180 degrees for 15 mins
- Mix all the ingredients and whisk until it forms smooth batter (not too lumpy). Add abit of milk if it's too lumpy.
- Add blueberries into the batter (NOT ON TOP OF THE BATTER)
- Line a baking paper in a baking tray and transfer the batter into the baking tray. Give a light tap on the counter top/table to release any air pocket
- Bake for 25 to 30 mins
- Let it cool for 10-15 mins
Ingredients to prepare the yogurt frosting
- 1 cup Greek yogurt
- 3-4 tbsp cream cheese
- Lemon zest (optional)
- Fruit yogurt (optional)
Methods:
- Combine all the ingredients and whisk until no lump is formed (smooth)
- To decorate, you can use piping or just apply the frosting liberally on the cake
- Add berries on top of the cake to finish it off
- Keep it chilled. Store in the fridge for 2-3 days. Best consumed immediately
* As much as we love bananas but we would not want to use too many bananas. Too many bananas make the cake even denser and mushy.
* If you want to use strawberry as the frosting, choose dried frozen strawberries and pulse it together wih the yogurt and cream cheese.
Heating the strawberries over the pan might not work as they are harder to break down on a pan.
* Cake can be store in a fridge for up to 3 days, but note that it will get denser each day.
Carrot Cinnamon Birthday Cake with Blueberry Frosting
Ingredients:
- 1 medium carrot, grated
- 1 medium apple, grated and drain the juice ( I'm using Fuji apple)
- 8 tbsp quick oats, blend to form oat flour
- 1 tsp cinnamon powder
- 1 tsp cocoa powder
- 1 1/2 tsp baking powder
- 2 eggs
- 3 tbsp full cream greek yogurt
- 2 overripe bananas (optional - for extra sweetness)
Methods:
- Preheat the oven at 180 degrees for 15 mins
- Combine all the ingredients and mix evenly
- Line a baking paper in a baking tray and transfer the batter into the baking tray
- Bake for 25-30 mins
- Let it cool for 5-10 mins
Ingredients to make the blueberry frosting:
- 1 cup of blueberries
- 1 tbsp corn starch
- Lemon zest
- 4-5 tbsp cream cheese
- 3 tbsp full cream greek yogurt
Methods:
- Pour blueberries, corn starch and lemon zest into a pan with a low heat and stir.
Continue to stir the blueberries until it is soft and flattened
- Once done, let it cool for awhile
- Pour cream cheese and yogurt into a bowl and whisk/beat until smooth
- Add the blueberry mix and continue beating until it forms purple frosting
- To decorate, simply apply the frosting on the cake. You may slice the cake into half and apply the blueberry frosting in the middle before putting the other half on top
*If you want to use strawberry as the frosting, choose dried frozen strawberries and pulse it together with the yogurt and cream cheese.
Heating the strawberries over the pan might not work as they are harder to break down on a pan.
*To speed up the cooling down process for blueberry, you can submerge the cup of blueberry in ice water
*Cake can be stored in fridge for up to 3 days, but note that it will get dense each day
*Alternatively you may freeze it for prolonged storage and thaw it before serving
No Fry, No Bake Mini Begedil/Perkedel
Ingredients:
ππ» 2 small sized potatoes ( peeled and diced)
ππ» a handful of pumpkin (diced)
ππ» a handful broccoli
ππ» a handful of carrots ( diced)
ππ» 2 tbsp minced meat ( or minced chicken)
Methods:
β
Steam all the ingredients together for 20 mins
β
Remove any excess water. Separate potatoes and pumpkin from the rest of the ingredients
β
Pulse broccoli, carrots and minced meat ( without any water) for 40 seconds. Pulse longer for finer texture
β
Use a fork and mash potatoes and pumpkin
β
Combine all the ingredients together and mix well
β
Use clean hands to shape into a ball or any shape of your choice. Serve!
π‘ For your own consumption, you may add seasoning such as salt, pepper and garlic powder before dipping it into egg and frying it.
Banana Oat Muffins / Pancakes
Banana Oat Muffins
Ingredients that you need:
- 2 overripe bananas (I'm using Sumifru bananas)
- 4 1/2 tbsp quick oat
- 2 eggs, beaten
- 3/4 tsp baking powder
- Unsalted butter (to brush muffin tins)
- 1/2 cup full cream milk (optional - if theΒ batter is too thick)
- Cinnamon powder (optional)

Methods:
- Preheat the oven at 180 deg for 15 mins
- Blend all the ingredients for about 40 seconds on high, or until it forms a smooth batter
- Brush the muffin tins with butter and pour the batter into each cups
- Bake for 15 mins at 180 deg or until golden brown
- Serve!

Methods:
- Using the same batter, scoop it and pour into a pan with low heat
- Let each side cook for about 3 mins or until the surface turns golden brown
- Serve!
Electric Lunchbox Recipes
Wintermelon & Tofu Soup
Ingredients:
ππ» 1/4 of small portioned wintermelon, remove the core/ center and cut into smaller pieces
ππ» 2 pieces of baby carrots or 1/2 piece of large carrot, peeled and diced
ππ» 1/2 pack of silken tofu, cubed
ππ» 2 tbsp minced chicken
ππ» 1 tbsp dried scallops, washed
ππ» 1 tbsp dried shrimps, washed
ππ» 300-400 ml of bottled/ filtered water ( depending on the capacity of the pot)
ππ» Baby food powder ( optional for extra seasoning)

Methods:

Put all the ingredients into the pot and cook for 45 mins to 1 hr
β
Once cooked, stir it gently
β
Ready to be enjoyed with white rice!

Vegetable and Egg Soup with Rice

[This recipe serves 1 adult or 2 kids]
Ingredients:
ππ» 1/2 medium sized potato, peeled and diced
ππ» 1 medium sized carrot, peeled and diced
ππ» 1/2 medium sized sweet corn
ππ» A handful of broccoli
ππ» 3 pieces of small or 1 piece of a big dried scallop (s)- optional
ππ» 1 egg
ππ» light soy sauce ( π‘: you may want to go to a sushi store, purchase some sushi and get the free soy sauce sachetsπ)
ππ» Bottled/ filtered water
ππ» White rice
Methods:

Wash all the ingredients thoroughly and cut them to the preferred size
β
Add bottled/ filtered water ( up to 3/4 of the container)
β
Cook with your electric lunch box for about 20-30 mins
β
Once cooked, add the egg. You donβt have to beat it beforehand. Let it cook again for another 5 mins
β
Sprinkle a little bit of soy sauce for seasoning
β
Serve with white rice!

Vegetable Steamed Egg and Buttered Rice
Recipe for Buttered Rice
Hereβs what you need:
ππ» 1 large dried scallop or 2-3 small/ medium scallops, washed thoroughly
ππ» a handful of cabbage, chopped or hand torn
ππ» a handful of cut carrots/ baby carrots
ππ» 1 tsp of butter ( salted or unsalted) - Iβm using salted one as there is no need for additional salt or light soy sauce
ππ» 300-400 ml of bottled/ filtered water ( add more water for more broth)
ππ» 1/2 cup of rice ( Jasmine rice)
ππ» 1/2 sweet corn for extra sweetness ( optional)
ππ» a handful of chopped shiitake mushroom for more flavour (optional)
β
To make the buttered broth, add all the ingredients (EXCEPT RICE) into the cooker pot and let it cook ( for about 30-45 mins). The longer it simmers, the more flavourful the broth is
β
Once cooked, set it aside to cool down. Filter the broth by removing the Ingredients
β
Wash Jasmine rice and add the broth ( instead of water) into the rice. Save some broth for the steamed egg too.
β

Recipe for Steamed egg with Vegetable
Hereβs what you need:
ππ» a handful of cabbage (hand torn or cut)
ππ» a handful of black fungus (chopped)
ππ» 2 eggs, beaten
ππ» 1 packet of egg tofu ( sliced)
ππ» butter vege broth ( that you made earlier) OR water ( if you prefer)
ππ» Scallion, chopped thinly ( optional)
β
Beat 2 eggs, add cabbage, black fungus and butter vege broth. The egg and broth ratio is 2:1 ( if you beat 2 large eggs in a cup, add 1 cup of water/ broth). Stir well
β
Add the sliced egg tofu
β
Place in the cooker and let it cook for about 30 mins
β
Sprinkle some chopped scallion if you prefer to :)
π‘This recipe also works on steamer

Tomato and Cabbage Soup
Hereβs what you need:
ππ» 1 large tomato, diced or cubed
ππ» A handful of cabbage, sliced or hand torn
ππ» 1 large dried scallop or 2-3 small ones, rinsed thoroughly
ππ» 300-400 ml of bottled / filtered water
ππ» 2 tbsp minced meat/ minced chicken
ππ» 1 tsp Unsalted or salted butter
ππ» Light soy sauce to taste
β
Melt the butter in the pot or container
β
Add water and stir well. Let it simmer for 5 mins
β
Add minced meat/ minced chicken, diced tomatoes, cabbage and dried scallop
β
Cover the lid ( same thing if you are cooking on a stove) - you may choose to stir it occasionally
β
Add some light soy sauce to elevate the flavour
β
Best served with hot white rice!
